After work on Friday, I dropped by Costco whilst waiting for RT to finish work. I picked up a dozen Hervey Bay scallops and some Wagyu tenderloins, although I didn't have a particular dish in mind at this stage.
 
At breakfast Saturday morning RT and I discussed what we should do with the aforementioned ingredients. We tossed around a few ideas, did a bit of "google" research and then set out to acquire some additonal ingredients to produce the following dishes...
 
Hervey Bay scallops with a parsley, garlic, chilli and butter sauce.
Topped with parmesan and panko crumbs.
 
This dish only takes a few minutes under the grill, so that the panko and parmesan turns golden and crispy. You need to watch it carefully though, as it can burn pretty quickly - or set off the fire alarm. I'm totes talking from experience here.

The main concern of this dish was the cooking of the Wagyu, however RT managed to cook it to a perfect medium rare. We did set off the fire alarm a second time though, trying to get a nice sear on the steak :T
 
Cooking with RT is awesome, as he is super patient with my overindulgent and pedantic ways :D
